Black Bean Salad Recipe


  • 1- 30 ounce can of black beans
  • 1 large big beef tomato
  • 1-2 avocados 
  • 1- 12 oz bag frozen corn
  • 2 limes (squeezed)
  • 2 tbsp olive oil 
  • 1/3 cup chopped cilantro
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp paprika 


Get a large bowl and set it nearby. In any order, chop tomato, cilantro, and avocado, add each item to the bowl. Open can of beans and drain thoroughly, add to bowl. Take bag of frozen corn and add to the bowl. 

Next, add all your seasonings, followed by olive oil. Cut limes in half, squeeze juice over the salad. With a wooden spoon, gently stir all ingredients together until the salad is evenly coated with oil/lime dressing and seasoning. Serve chilled. 

Helpful Tip: If you plan on eating over a couple of days, add avocado to each serving instead of the full salad. That will keep the salad tasting fresh, and avoid getting that browned look on the avocado.
